This easy roasted courgette side dish with thyme, garlic and paprika is virtually effortless to make. It also requires hardly any ingredients. If you love a good golden colour on your roasted vegetables, and seasoning which won't overpower the natural flavour of courgette, this is the dish for you. Healthy, pretty, and easy - what's not to love!
Step 1
Start heating your oven, with a non-stick baking tray inside, to 200 degrees Celcius.
Then chop your courgettes into evenly sized chunks.
You can do this by slicing them into rounds, then slicing these rounds into 4 or 9 pieces in a criss-cross pattern.
Step 4
Mince or grate your garlic, then add to the courgette chunks along with the thyme, olive oil, salt, pepper and smoked paprika.
Don't shy away from using a good amount of salt. I like to use two generous pinches of crushed sea salt flakes on this roasted courgette side dish.
Then either mix by hand or, preferrably, put everything in a tupperware, close the lid, and shake! This will coat the courgette perfectly with the seasonings.
Step 5
Once the oven is up to temperature, put your coated courgette on the baking tray.
Cook, undisturbed, for 35 minutes.
You can turn half way through if you wish. However, I prefer the rich golden colour you get from just letting the roasted courgette sit for so long on one side.
